Serenbe Farms and The Ravishing Radish

Our hearts BEET for the Serenbe Farms CSA...and this delicious Radish recipe!

Some vegetables get all the love. Tomatoes, squash, peppers...those guys are always crowd favorites. When the weather cools though, there's nothing quite as tasty as a fall root veggie, and the radish is one of our favorites! When eaten raw, they're crunchy and a bit peppery, perfect for spicing up a salad or sandwich (or dipping in hummus. Yum!). For our foodies looking to get a bit more creative, we recommend this Radish with Garden Pesto recipe! It's perfect as a side dish with seafood or chicken, or as a starter.

Oh, and our recommendation for where to get your radishes? The Serenbe Farms CSA, of course! CSA stands for Community Supported Agriculture, and it's the best club to be a member of in our completely biased opinion. It's a symbiotic relationship between you and your farmer, providing them with the money they need for planting up front then giving you a weekly share of the bounty once it's ready to harvest. The Serenbe Farms Fall CSA begins August 30, with pickups on Tuesday evenings until November!

Radish with Garden Pesto

Serves: 6

2 lbs red radish with tops

1 oz Arugula

1/2 oz Mint

1 lemon, zest and juice

2 oz olive oil

sea salt to taste

In a food processor - or mortar and pestle: Add arugula, mint, 1-2 oz radish tops, zest and ice of lemon and pinch of salt. As ingredients are pulverized, drizzle olive oil to emulsify. Slice radishes into eighths, then toss all together in a bowl. Add sea salt to taste and serve chilled.
